Gluten Free Scone Recipe

Gluten free oat flour 1 ¼ cup
White rice flour 1 cup
Cane sugar ¼ cup
Baking powder 2 tsp.
Salt 1/8 tsp.
Butter, small dice 85g (6 Tbsp.)
Egg 1 medium
Milk, non-dairy 3/4 cup
Vanilla ½ tsp.
Apple, small diced 1 cup
Cinnamon 2 tsp.
Method of Preparation:
- Add the oat flour, white rice flour, sugar, baking powder, and salt to a bowl or Kitchen Aid mixer. Blend until mixed thoroughly.
- Add egg, milk, vanilla, cinnamon, and butter. Blend until just incorporated, don’t over mix.
- Add apples and blend until just incorporated, don’t over mix.
- Shape into scones. The dough will be sticky, oil your hands if needed. The dough needs to be sticky because gluten free flours require more moisture.
- Bake at a 375-degree oven until light brown on top, about 20 mins.
