Ingredients:

Gluten free oat flour                        1 ¼ cup

White rice flour                                1 cup

Cane sugar                                      ¼ cup

Baking powder                                 2 tsp.

Salt                                                  1/8 tsp.

Butter, small dice                             85g (6 Tbsp.)

Egg                                                  1 medium

Milk, non-dairy                                  3/4 cup

Vanilla                                               ½ tsp.

Apple, small diced                            1 cup

Cinnamon                                         2 tsp. 

 

Method of Preparation:

  1. Add the oat flour, white rice flour, sugar, baking powder, and salt to a bowl or Kitchen Aid mixer. Blend until mixed thoroughly.
  2. Add egg, milk, vanilla, cinnamon, and butter. Blend until just incorporated, don’t over mix.
  3. Add apples and blend until just incorporated, don’t over mix.
  4. Shape into scones. The dough will be sticky, oil your hands if needed. The dough needs to be sticky because gluten free flours require more moisture.
  5. Bake at a 375-degree oven until light brown on top, about 20 mins.
